My cookery classes are a combination of know-how, food chat and fine food covering Catalan, Spanish and wider Med cooking. Something for everyone whatever your talents.
In our 4-hour morning classes, firstly a freshly squeezed juice + tortilla as we say hello and you get over the shock of my tattoos!
Being based in Sitges' perfect- sized indoor market, we'll take a tour for 30 minutes. I buy almost all my produce here and I've known many of the traders for years.
Then we knock out the dishes. Not the sort of class where we all have a chopping board and knife; sure everyone can help and we'll move at a pace to suit you, but most of all I want to inspire you.
Here we’ll be preparing a buffet of Mediterranean food inspired by my life here in Spain and also my many visits to Italy and most of the Med’s other shores that I’ve dipped my toes into. Ideal party food where you want a great looking table of food.
We’ll prepare a mix of food for small plates + forks and fingers. No complications, just a great combo of diverse dishes, familiar flavours, new ideas, all with sun kissed flavour for sure. About 10 dishes that will likely include:
Rabbit & pesto stuffed Courgettes, Tomato Bruschetta,
Spanakopita, Empanadillas (Greek lamb & aubergine), Mini Tuna Burgers, Albondigas, Chorizo in Red Wine, Brandada, Broad Bean salad.
