Au programme

Join me for a night in Spain during a hands on paella cooking class learning how to make a seafood paella (we can accommodate allergies and other dietary restrictions, please just let us know in advance) and two tapas: tortilla de patatas and setas al ajillo (two staples of Spanish cuisine). My Paella class class is inspired by Dorita Jáuregui, an amazingly good cook that I had the good fortune to meet about 35 years ago and I consider to be almost a second mother. I have cooked  hundreds of paellas over the years and I still get very excited each time I make it. The process is deliberate but relaxed, inviting to cook mindfully enjoying how every step fills the kitchen with new, wonderful aromas. During this Spanish food class everyone will be working on the Tapas and Paella and afterwards, we will sit down to share our meal. Beginning with the tapas, participants will get an introduction to knife skills and other culinary basics - sweating vegetables, infusing oils with garlic, using salt in cooking, and others - which can be used throughout your other cooking adventures. As we cook, I will explain the intricacies of making a paella, talk about the rice used and the appropriate spices. While learning to make this dish I will give you a plethora of information that will expand your toolset in the kitchen. To finish the meal I will serve you my very enticing version of

I'm originally from Argentina, a place with its own special mix of cultures. Having lived in Los Angeles for the past 39 years and exposed to its rich diversity of cuisines has provided me a wide range of experiences which influence and inform my food on a daily basis, enabling me to borrow ingredients and techniques from one another. Passionate about cooking and sharing my knowledge, my aim is to teach fundamentals to free people from having to rely on recipes and help you become creative in the kitchen - in a relaxed, calm and really fun atmosphere. At the end of class we all participate in a communal table eating what we made. Having hosted over 1000 classes in the past few years, I'm very comfortable hosting a wide range of attendants, from the beginner to the very knowledgeable.

We will provide all ingredients, cooking equipment and aprons. We don't provide alcoholic beverages but guests are welcome to bring their own (no corkage fee). The class is fully hands on. We will eat snacks we make during the class followed by a sit down dinner enjoying the fruits of of our labor.
