Au programme

Our goal is to take some of the mystery out of sourdough bread making and help you begin or refine your own baking practice. We'll do this in the context of community with other bakers of all skill levels, just learning and growing together. We'll kick off our day with a visit to Holland's historic De Zwaan windmill and a conversation with the miller in order to better understand stone ground grains. Then we'll reconvene in the glass house to learn about starting and maintaining our own sourdough mother cultures. The rest of the time will be spent in mixing, folding, shaping, and proofing sourdough loaves. You'll get to see a few loaves baked off in our kitchen, and then you'll take a pair of your very own loaves home to bake the next day. You'll leave the workshop with: * a deeper knowledge about grains, milling, and sourdough culture * your very own sourdough starter * two loaves to take home and bake * bannetons for proofing your loaves * a lame for scoring your loaves * book recommendations for further learning * a take home packet with detailed instructions and recipes * new friends(!) We'll also enjoy drinks and a farmhouse lunch together. We can't wait to see!

We’re all co-creators, made for community. So we’ve designed a space to create and be known. It’s a glass house. We’re hosting our first round of sourdough workshops in fall 2019. We'll explore grains, milling and fresh-food-flour, sourdough culture starting, and we'll shape and bake sourdough loaves together. Becky is our lead teacher and has studied with sourdough genius Tara Jensen (author of “A Baker’s Year”), and completed a stint with the bakers at Field and Fire in Grand Rapids, one of the areas only bakeries to use a masonry oven.

Please plan to meet Becky and Chris at De Zwaan Windmill at 8am sharp to begin our sourdough workshop with a visit to the Windmill and conversation with the miller. We’ll provide driving directions to the glass house in a Zeeland to continue our workshop upon completion of the tour at the Windmill.
