Chef Andrew McConnell and architect Pascale Gomes-McNabb's unique combination of excellent food and interior design took this city by storm (Moon Under Water, Cutler & Co., Supernormal, etc.). Cumulus Inc. is a case in point. Described as an 'eating house and bar' rather than a restaurant, this is a welcoming and relaxing place to enjoy McConnell’s widely acclaimed food.

Verheul’s Euro-centric menu has the same attention to detail as fine dining, but none of the pomp. Cases in point: the luscious creamed corn that’s cut through by a mixture of citrus juices, including grapefruit. Then there’s the slow-roasted red cabbage, which has reached the stage where it can’t be taken off the menu – the regulars would revolt. Elsewhere there are cured meats, cheese, parfait, meats and whole fish to share. Yes, you can drop in for a quick bite. People rarely do, though. First: the place is usually booked out. Second: this isn’t the kind of spot you want to leave.

A lengthy permanent wine list covers the major grape varieties, but also devotes entire sections to less familiar varietals such as grüner veltliner, chenin blanc and gamay. Orange and minimal-intervention wines feature, and there are sections for half-bottles and magnums. There’s also a shorter changing list of new and interesting wines the team is enjoying at the time, plus 15-odd wines-by-the-glass that are on offer at any given time. The food menu changes daily, but you can expect a range of small bites such as oysters, bay scallops or charcuterie from McConnell’s own butcher, Meatsmith. Larger plates might include pasta or porterhouse steak. There will always be plenty of cheese, and m

The follow-up to Tipo 00 stretches beyond the pasta-bar concept to deliver meat and seafood dishes that are merely Italian-ish. But like Tipo, its subtle culinary innovations and familiar yet attentive service push the experience beyond expectations.

David Thompson's street-Thai party (the third Australian branch) scorched its way into Crown Casino in January, bringing with it incredible fire power in the chicken larb – a rubble of chicken skin, spices and roasted chillies that starts burning around your lips and finishes somewhere next week – but also stunning depth and balance to the familiar, which makes getting a green curry, duck fried rice and especially the greens in fermented yellow bean sauce smart and essential. It's not street food cheap, but worth the spend and the lunch banquets for $50 a head are great value.

There are three levels of opulence, modern art and solid bamboo furnishings at Chris Lucas' new Japanese palace on Flinders Lane. But narrow your focus to doing omakase at the main glowing sushi bar for the best experience. Here you get the full benefit of the freshness of the all-Aussie-sourced (and sometimes alive) tuna, crabs and sea urchin roe, palmed into just-warm nigiri that show all due respect to the textures and tones of the fish. There are razzed-up hot dishes, colourful caterpillar rolls and a mortgage-y wine list too, but nothing beats getting centre stage.

The team from St Kilda East's Vietnamese(ish) resto-bar Uncle have never promised traditional. They've always aimed for good times, flex and potency and achieved it. And now they've brought that package, wrapped in bamboo, to the city. Here they'll borrow Thai staples like the ubiquitous bar snack of betel leaves and fill them with lime-cured hapuka. They might sling you a pork knuckle cooked to destruction in master stock or go for hell for leather into Italo-Asian fusion with burrata, dressed with heirloom tomatoes, barrel-aged fish sauce and pickled papaya. And that's just fine.
