From the team behind Locanda Vini e Olli in Clinton Hill, Camillo highlights the cuisine of Italy's capital, serving traditionally prepared Roman dishes. The focal point of co-owner/executive chef Michele Baldacci’s menu is pinsa, a style of pizza that dates back to Ancient Rome. Originally made with a dough that uses a mixture of various leftover grains, Baldacci is serving his own version using a combination of wheat, soy, and rice flour; and utilizing techniques he learned studying under a master, in Rome. Named after Count Camillo Negroni (the alleged original creator of the Negroni cocktail), the restaurant boasts a beverage program featuring several variations of the famed Italian libation, plus other classic cocktails. An all-Italian wine list, curated by co-owner/sommelier Rocco Spagnardi, rounds out the beverage offerings with bottles from regions around Rome, three of which are available on tap (red, white, and rosé).
